Recipe: Scallion Infused Olive Oil

DirectionsWash scallions and cut scallion greens off from scallion bulbs. Refrigerate scallion bulbs for future use. Slice one cup of scallion greens into small sections.
Add one half cup of scallion greens to glass jar, add a pinch of sea salt and add one half cup olive oil. Add another half cup of scallion greens to the same glass jar, add another pinch of sea salt, add another one half cup olive oil. Cover jar with a tight lid and chill in refrigerator for seven to ten days.
Strain scallion infused olive oil into a clean glass jar with a tight lid. Store scallion infused olive oil in the refrigerator and use within one month.
