Garlic Scape Infused Olive Oil

Recipe: Garlic Scape Infused Olive Oil

This recipe features local produce from 9 Bean Rows Farm and locally produced products from Higher Grounds Trading Co.


Farm fresh local garlic scapes
Local fair trade organic olive 0il
Sea salt 


Wash garlic scapes and cut woody sections off of stem bottoms and cut off unopened blossoms from tops. Refrigerate blossoms for future seasoning use. Slice one cup of garlic scapes into one quarter inch sections. 

Using a muddler, bruise garlic scapes to release juice from stems. Add one quarter cup of muddled garlic scape stems to glass jar, add a pinch of sea salt and add one half cup olive oil. Add another quarter cup of muddled garlic scape stems to the same glass jar, add another pinch of sea salt, add another one half cup olive oil, cover jar with a tight lid and chill in refrigerator for seven to ten days.

Strain oil into a clean glass jar with a tight lid, store garlic scape infused olive oil in the refrigerator and use within one month.
