warm winter greens salad


farm fresh organic baby spinach
farm fresh organic baby tatsoi
farm fresh organic baby arugula
farm fresh organic baby mustard greens
farm fresh organic baby pea shoots
farm fresh organic turnip
farm fresh organic onion
local organic cherry honey mustard 
local wild leek vinegar
local verjus
organic green onion infused olive oil (recipe link)
organic sea salt

chop one small onion and add to pan with one teaspoon oil. chop one small turnip and add to pan, stir and cook for two minutes with lid on. mix three cups spinach, one cup tatsoi, one cup arugula, one cup mustard greens, one cup pea shoots. add greens to pan, season with salt, remove from heat, place lid on and let sit for two minutes. mix one tablespoon mustard, one tablespoon vinegar, one tablespoon verjus and three tablespoons oil. stir turnips and onions into greens, plate greens and drizzle with dressing.
