zucchini, avocado & corn salad





















ingredients
farm fresh organic butter lettuce
farm fresh organic arugula
farm fresh organic zucchini
farm fresh organic tomato
farm fresh organic sweet corn
organic avocado
farm fresh organic basil
farm fresh organic dill
farm fresh organic shallot
organic macadamia nuts
lemon infused olive oil (recipe link)
lime and cilantro apple cider vinegar

directions
slice zucchini into matchsticks and cut corn off cob. toss zucchini and corn in some lemon oil, lime cilantro vinegar and a little sea salt to marinade for ten minutes. remove basil and dill leaves from stems to equal a half cup and set aside. skin and slice one small shallot. add 1/4 cup nuts to blender and blend until a smooth. drain oil and vinegar from marinade into blender with herbs, shallot and white pepper and blend.  add water to thin out to desired consistency. remove avocado pit and skin from fruit. chop avocado fruit and tomato and add to plate with salad greens. add marinated zucchini and corn to salad; top with dressing.
