Pickled Asparagus and Wild Ramp Oil

Pickled Asparagus Ingredients
farm fresh organic asparagus

farm fresh organic spring green onions
farm fresh organic chervil
2 tablespoons organic apple cider vinegar
1 tablespoon black peppercorn
1 tablespoon coriander seeds
2 tablespoons sea salt

Pickled Asparagus Directions
wash and cut asparagus to fit glass jar.  wash and slice sping onions.  insert asparagus into jar and layer with chervil stems.  add sliced green onions, cider, peppercor, coriander seeds, sea salt and fill jar with filtered water.  cover jar with a tight lid and chill in refrigerator for three to four days, then enjoy!

Wild Ramp Oil Ingredients
farm fresh organic wild ramps
organic olive oil
sea salt

Wild Ramp Oil
wash and cut whites off of wild ramps.  slice ramp greens into one quarter inch pieces. add greens into jar and toss in a few pinches of sea salt.  cover greens with olive oil. cover jar with a tight lid and chill in refrigerator for seven to ten days.  strain oil into jar and reserve greens.

Optional: add a bit more olive oil to the greens, toss in some toasted pine nuts, parmesan cheese, sea salt and pepper and blend into a quick pesto.
