winter roots soup






















ingredients
2 tablespoons organic olive oil
farm fresh organic garlic
farm fresh organic shallots
organic celery
farm fresh organic sweet potatoes
farm fresh organic red potatoes
farm fresh organic rutabaga
farm fresh organic turnips
farm fresh organic parsnips
6 cups organic vegetable stock
farm fresh organic herbs (rosemary, parsley, oregano)

 

directions
wash and chop vegetables; slice shallots, mince garlic and herbs. sauté shallots, garlic and celery in oil for a few minutes. add broth and chopped vegetables and cook until vegetables are done. add herbs, sea salt, pepper and simmer additional five minutes. blend cooked ingredients with hand blender directly in pot; taste and add additional salt and pepper as needed. stir and cook on low for another five minutes. serve with fresh chopped chives.
