winter minestrone
ingredients
2 tablespoons organic olive oil
farm fresh organic garlic
farm fresh organic shallots
organic celery
farm fresh organic carrots
farm fresh organic rutabaga
farm fresh organic turnips
farm fresh organic parsnips
farm fresh organic swiss chard
organic tomato juice
organic diced tomatoes
organic tomato paste
organic bean mix
farm fresh organic herbs (rosemary, thyme, oregano, chives)
organic red wine vinegar
cracked sea salt and pepper
directions
wash and chop vegetables; slice shallots, mince garlic and herbs. sauté shallots, garlic, celery and carrots in oil. add rutabaga, turnips, parsnips and diced tomatoes; cook for a few minutes. add tomato juice, tomato paste and bean mix and cook for ten-fifteen minutes until root vegetables are done. add swiss chard, herbs, vinegar, sea salt and pepper to taste and simmer additional five minutes. serve with fresh chopped chives.
